For nearly 15 years, Mr. Tran Van Boi has been diligently bringing beef rolls – a Quang specialty to the South. Not only to satisfy the nostalgia of expatriates, Mr. Boi’s “Co Hue beef patties” also created a culinary brand in foreign lands.
Maintain the traditional taste
Growing up in the countryside of Binh Lanh (Thang Binh), in 2000, Mr. Tran Van Boi (born 1980), decided to go to the South to learn a trade and start a career. During the day, he studied and worked at a company operating in the mechanical and electrical field. At night, he studied Korean. After nearly 5 years, after graduating from school, he worked for a Korean corporation specializing in constructing mechanical and electrical projects in Vietnam.
Even though he has a stable job with a high income, Mr. Boi still worries about how to develop the economy with his homeland’s specialties. His wife’s family has been making traditional beef patties for decades, but only sells a few kilograms to acquaintances every day, except when they are a little busy at the end of the year.
In 2010, Mr. Boi determined to invest in this product to revive the family’s traditional craft with the brand “Miss Hue beef patties”. Each piece of meat, each wrapped banana leaf was carefully inspected by him. If there is any stage that is not satisfactory, he will ask the worker to adjust immediately. In particular, Mr. Boi does not use borax, mix powder, and absolutely does not use banned substances in preparing beef patties.
The beef chosen must be supple and removed from the tendons. Banana leaves used must be cleaned and treated with boiling water before wrapping. In addition, instead of cooking, Ms. Hue’s beef patties are steamed. Although this increases production costs, in return the product is both crispy, chewy and rich in flavor. After steaming, the rolls are placed in a cool place, then vacuum-sealed to preserve them longer and cleanly.
“All production processes and raw materials are kept intact according to the family’s traditional methods from past to present. Even the factory, we are located in Da Nang City, where there are many advantages in terms of raw materials and transportation.
Over the past 10 years, Ms. Hue’s beef patties have been transported to Ho Chi Minh City by air, shortening the time to keep the patties fresh and delicious. Every day at 9 a.m., beef patties arrive at Da Nang airport and around 12 p.m. they arrive at distribution points in Ho Chi Minh City” – Mr. Boi said.
Developing Quang brand
According to Mr. Boi, Ms. Hue in the brand is his wife, Ms. Le Thi Kim Hue (from Tam Thang commune, Tam Ky city). In 2013, Mr. Boi invested heavily in brand communication, pioneering specialty sales on Website, Facebook and e-commerce platforms.
Each month, the “Miss Hue beef patties” facility produces about 300 – 400kg of products and in the twelfth month of the lunar calendar every year, the facility produces more than 3 tons. In addition to beef patties, Mr. Boi also researches and supplies to the market other products such as green chilli sausages, pork patties, sausages, meatballs…
“Miss Hue’s beef patties” is trusted by many consumers, in which the product has entered the Ho Chi Minh City market. From a traditional product in the homeland, for 3 consecutive years the product “Miss Hue’s beef patties” has been in the top high quality clean food brands (Viet Nam Top Food). Products have been repeatedly displayed and introduced at conferences, forums connecting trade supply and demand, tourism specialties… in Da Nang City, Ho Chi Minh City and many provinces. other.
Recently, the owner of the “Miss Hue beef patty” brand has also actively participated in activities of fellow countrymen Quang Nam in Ho Chi Minh City; sponsoring and accompanying sports tournaments of compatriots in districts, business clubs, students, newspapers… In intimate tea parties of Quang compatriots, Mr. Boi’s beef patties are always the best.
